Because I made a meal JUUUUST for me! Well I wanted to make this dish and it had way too many ingredients that the hubs doesn&rsquo;t like so it is a me meal night! I have to admit, I am very excited about it!! So it is winter as you all are aware and what veggies are prominent during the winter??? Winter greens!!! My fave!!! Unfortunately, J will not touch a cooked green with a 10ft pole and I am not sure why as they can be quite tastie if made right! Cooking them right is the key! Of course, I think that can be said about any food!</p>
<p>Tonight&rsquo;s recipe came off of the Whole Foods website. I always forget they have recipes out there and I also always forget that their recipes are usually very good!! I went to their site last week and found a pic of tonight&rsquo;s dish on the main page and it just called to me. I had to make it! No ifs ands or buts about it! So I put it in this week&rsquo;s meal rotation and I am glad I did. <p>Yeah, yeah I know what you&rsquo;re thinking. I am a slacker! No, I still have not setup the router at our house and I really have no excuse for not doing so. I just decided to do so many other cool things this weekend! I was very busy!! I made bread, I made yogurt, I made deodorant, I made face wash, I made raw vegan cookies, I made J&rsquo;s awesomeness cookies, plus I made breakfast, lunch, and dinner everyday and did laundry, and went to church, and went grocery shopping, and worked out, and visited my sister and her family, and went out with friends and&hellip;.i could keep going but I think you get the drift! Busy, busy, busy! So therefore, no router setup which means still not internet access for my system which means still no pictures for you all. The sad thing is, I am taking pics and I think I am getting better at it! Of course I don&rsquo;t have the discerning eye of a true photographer but I am liking my photos!</p>
<p>Anyhoo, tonight&rsquo;s meal was ennnh ok. It was healthy which is my goal right now and it was tastie but in a weird way. The recipe is for Salmon Rosti from Eating Well. For those of you not knowing what rosti is, it is actually a Swiss (German) dish where it is a patty made out of mostly potatoes. As you can tell from the name this particular recipe for Rosti contained Salmon. It calls for canned salmon and usually I don&rsquo;t mind canned salmon but I decided to try a different brand and whoooooa can we say fishay! It was a wild caught sockeye salmon, skinless and boneless in the can. And yeaaah fishay, that is really all I can say! I don&rsquo;t typically purchase sockeye canned and I don&rsquo;t think I will in the future. The hubs only gave it a 3.5 stars which isn&rsquo;t horrible&hellip;.he liked it he just said they were fishie. And boy were they fishie &ndash; almost overpoweringly fishie. But the potatoes were REALLY good!! Or maybe I just haven&rsquo;t had real potatoes in such a long time that they tasted so good that I was willing to overlook the fishie taste. They were just nice and salty and crunchy and potato-y!! Hmmmm I am almost salivating thinking about them right now! I think I am still in shock! So as you may have read last night, it snowed in Atlanta and yeah let's just say the roads were pretty bad and what is worse is we aren't getting above 25 degree temps. This is an amazing all time low for Atlanta...at least in my time here. It has been a while since I have felt such bone chilling temps and I vaguely remember this being one of the main reasons why I flocked to the south. Anyhoo, I was planning on grilling the grass-fed skirt steak that I purchased at whole foods but the thought of standing out there to do so really did not appeal to me in the slightest. So i had every intention of broiling the meat and I know it isn't as good as grilling but hey after dark it is in the teens and that is not counting the windchill!! Sooo out of nowhere J said, I'll cook it! This coming from someone who really does not cook at all. Cooking to him is pouring a bowl of cereal. The hubs chose not to eat this evening's meal as he was REALLY hungry when we got home from the gym and he just couldn't wait for me to cook it so he had cereal. Worked for me as I would have had to make two versions, one with black beans and one without as he is still in his anti-bean thing. Although I am sure he will always be on the anti-bean train. I think he should try them, he would like them but he is hung up and has an opinion based on I don't know what and he refuses to even try it. I think I am starting to accept it but part of me still wants to hide it in his meals and see if he will eat them!</p>
<p>It is snowing in Atlanta - woo hoo! Since the hubs decided to put aside my router and use his computer instead, they have his MAC address and I can&rsquo;t get the router setup without either (a) calling them or (b) having my husband search for his paperwork in hopes of finding a website where I can enter in the MAC address myself. Siiiigh&hellip;I should have known better. This is all my own fault so I really can blame no one else but me&hellip;.but it is still annoying!</p>
<p>You know it has to bad when I didn&rsquo;t even bother to take pictures of tonight&rsquo;s meal! I figured why should I waste my time taking pictures to show off the cooking steps and my end result when I can&rsquo;t post them for god knows how long! Ugh&hellip; I wish I had taken pics though because it was REALLY tastie and so super easy and so colorful and pretty! <p style="text-align: left;">Unfortunately, I have zero pictures to start my recipes off after the new year so I apologize. I, unfortunately am having to use the hubs' computer and I don't want to deal with resizing pics on his computer so I can upload them here. You see, I have a mac and even though I am an IT geek, things are just easier on a mac. I don't have to resize my pics, it just knows what I am trying to do and does it for me! I figure since I have to think all day that I should have some time off and this is it. I will try and add pictures later.</p>
<p style="text-align: left;">So back to why I am using my hubs' computer. Hmmm let's see....about a week and a half before Christmas I was walking up the stairs and I overheard my husband's phone conversation or really just one important statement of his phone conversation that would directly affect my life. <em>"You know, quite honestly, I have had nothing but problems since I signed up with you. Forget trying to resolve my issue because you obviously can't and cancel my account." </em>Being the person that I am (occasionally melodramatic) I ran in front of him and mouthed while flailing my arms - WHAT ARE YOU DOING?!?&nbsp; And that my dear readers was the end of my cable, internet and phone package. You see, the hubs didn't want to listen to me when I said Comcast sucks. I told him that we should get DTV to begin with especially since we wanted HD but he gave me a big NOOOOO I don't want to deal with a dish, which I do understand. He soon learned why we should have gone with dtv and unfortunately, he decided to do something about it right before the holidays. <p>Well, I have to be honest, I am actually impressed with the hubs' rating of the meal tonight. He HATES rice but he ate it! He did say he didn't love it because he didn't like the rice but he still ate it and I think that is quite an accomplishment! This did have quite a kick to it which I thought he would like but it was just a tad bit too spicey for him! I still thought it was pretty good! You see, I went to college in New Orleans and I can't really say I have had jambalaya in any way shape or form since I left so this was a nice treat! I also can honestly say I have never made jambalaya from scratch. <p>Five stars, can you believe it?!?! I haven&rsquo;t had 5 stars in a LONG time!! What is more impressive is I have never made scallops before!! So I really didn&rsquo;t know what I was doing! Honestly, I have never actually eaten scallops before and I have to admit they are quite tastie! I wasn&rsquo;t sure if I would like them so I made some grilled chicken for me as a backup just in case! But I was quite surprised! What surprised me even more is that they weren&rsquo;t fishy or chewy which is what I was expecting. <p>Ahhh Thanksgiving&hellip;there is no better holiday then one designed to give thanks for everything you are thankful for and stuff your face! I, personally, am a big fan of Thanksgiving but I also love to eat and try yummy foods! Luckily, I have the ability to eat and not gain weight so I can thoroughly enjoy the holidays without too much of a problem! They keep telling me that as I get older this will change, but it hasn&rsquo;t yet so I am taking full advantage of what I have!!</p>
<p>So every year we have Thanksgiving at my sister&rsquo;s house and both she and I and our mother split up the pieces of the meal to make it easier on everyone. We also had a little help from my mother-in-law too! I made two sides, Glazed Carrots with Pecans and Artichoke Parmesan Sourdough stuffing. <p>Wow, I am totally embarrassed by the hubs rating ESPECIALLY since he wouldn&rsquo;t try it!!! For that he shouldn&rsquo;t be able to vote PERIOD! It really was quite a delish dish and the amaretti cookies on top were quite fabu! But all the hubs did was stare at it and go &ldquo;you put that squash in there that I don&rsquo;t like, didn&rsquo;t you?&rdquo; The sad thing is he eats that squash (being butternut) when I roast it in the oven with cinnamon and sugar and all sorts of naughtiness but I guess when I serve it that way it is cut into chunks and sorta looks like sweet potato so maybe he confuses the two. Fact of the matter is, he does eat the squash and I am thoroughly disappointed that he would do nothing more then stick a piece of one of the fork prongs into the dish, pick up no food on it, lick the tip and say &ldquo;I don&rsquo;t like it!&rdquo; Sometimes he really is a kid!</p>]]></content:encoded></rss:item></rdf:RDF>
