Grilled Steak Soft Tacos

As promised, I have a post for you all! My husband’s brother came into town last night so we had the pleasure of having him for dinner! He is a foodie and I think he is even more of a foodie then I am! He even makes his own bread, brews his own beer (and enters contests and wins) and roasts his own coffee beans, on his grill mind you!! I am always quite impressed by him and his wife and the many things they get involved in! I also know that when we go to visit them, I will usually pick up some new recipes! So for today’s post we will have a real foodie and also the non-foodie rating for the dinner!
I don’t know if you all have realized this but the holidays are right around the corner. I am starting to panic! I normally have all my Christmas shopping done prior to Turkey day and that will not be happening this year! Ooops! I have been traveling a lot lately so my spare time is pretty much non-existent, add to that, that I joined a new gym that I hit on the way home from work instead of going during my lunch hour and I get home rather late! I swear the older you get, the less hours there are in a day to get things done. It truly is quite frightening!
The hubs and I have our two year anniversary coming up next week too and I am not prepared at all. I am doing a slack job on everything lately; the blog, life etc. It kinda sucks! I am a bit disappointed in myself. I honestly have no idea what to get him – I usually can come up with something but I am absolutely clueless. Any ideas???
Anyhoo, tonight’s recipe is a combination of some recipes along with a few ideas from my head so we will say it is a recipe from Bon Appétit adapted by yours truly!! I thoroughly enjoyed the dinner although I was craving some cow! The hubs was not originally going to partake in the dinner but once he saw it sliced and tasted a bite of the steak he decided he had to have the tacos! The recipe is quite simple and I thought it to be a good combination. I used a flat iron steak that I got at Whole Foods. Can I just tell you how much I love Whole Foods and how much I am going to go broke if I don’t stop shopping there! It is so easy to spend a TON of money there on nothing! It amazes me! As far as I am concerned though, it is worth it as nothing here compares to the quality and freshness!
As you can see, the non-foodie rating is 5 stars. The hubs LOVED it! I haven’t had a 5 stars in a long time! So it was truly welcomed! Sometimes I think he takes my cooking for granted! He keeps joking that one day he will make dinner but I have yet to see it happen! You know it is funny, the hubs has requested that I allow him to have cereal twice a week. I can handle once a week but twice? Really? So on Tuesday night we did just that! I was tired after my cardio interval training and didn’t feel like cooking so I actually gave him his cereal night. And do you want to know what he said?? He said he was upset because there wasn’t a hot meal for him to eat! So really what it comes down to is that he wants me to think he wants cereal twice a week but he really wants me to continue cooking!
The foodie rating is 4 stars as he wishes for more heat. I can understand that – I rarely use heat in my recipes as it tends to disrupt my oh-so-sensitive stomach. That being said I offered him some Louisiana Gold hot sauce but he wished he had the green tobasco sauce which I could not offer him! Technically I should have probably used some fresh jalapeno in the pico I made and probably some red pepper and more chili powder in my steak rub but I didn’t. So apologies for that! Both the foodie and myself really liked the addition of the grilled yellow/orange peppers to the taco as it added just the right amount of sweetness to it! I think if I were to make this again I would grill a couple ears of corn and slice the kernals off the cob to add to it as well!
Well, here it is!
Ingredients
1/4c fresh squeezed lime juice
1lb Steak (flat iron, flank, skirt etc)
2tbsp cumin
1tbsp coriander
1tsp cinnamon
2tsp chili powder
Salt & Pepper to taste.
1 yellow and orange bell pepper
1c diced roma tomatoes
1/4c diced onion (I used red but you can use white)
3tbsp finely chopped fresh cilantro
1tbsp fresh lime juice
1 garlic clove minced
Arugula
Yogurt/sour cream
Guacamole (I made fresh guac last night!)
Corn tortillas
Place steak, trimmed of fat, in a plastic bag with the lime juice. Seal and marinate for about 1 hour.
Combine cumin, coriander, cinnamon, chili powder, salt and pepper in a small bowl. Remove steak from bag and rub with seasoning. Clean and slice pepper into chunks big enough to grill!

Heat grill to med-hi heat and spray with an oil of your choice (I use grapeseed) Place steak and peppers on grill. Grill steak about 3-5 mins per side depending on thickness and make sure to watch peppers so they do not get too charred!
While steak is cooking, combine tomatoes, onion, cilantro, lime juice and garlic in a bowl. Season with salt and pepper to your liking. If you would like more heat, you can easily dice up a jalapeno and add it to the pico.

Wrap tortillas in tin foil and place on the grill to warm. Remove peppers and steak, cover with tin foil and let rest for about 5 minutes. Slice the steak on the diagonal and slice peppers into smaller strips.

Serve steak and pepper tacos with arugula, pico, guacamole, sour cream (or in my case plain yogurt) and whatever toppings you would like to add!

great dinner, erin! thanks for your gracious intro, although i think you were too generous in describing me. my latest beer entries took 4th (from last!) and DFL in the Seattle Novembeerfest competition in their respective categories. Sure can't brag on results like that!!!
But i do love to eat, so i'll accept that description!
